Fresh red tomatoes

The tomato is a fruit that we rarely consume as a desert, it is more often consume as a vegetable. It has many beneficial properties for the body and health, that we will present to you. There are many varieties of tomatoes (beefsteak, Roma, fandango, cherry, Marmande etc.) that may display different colours (red, yellow, beige, pink etc.).The tomato can be consumed raw or cooked, its regular consumption as well as its derivative products has a positive and preventative role for the health.

 Its beneficial properties

The tomato is a fruit rich in natural antioxidants; this wealth varies according to their growing conditions, their maturity and their variety. Tomatoes grown by the standards of organic farming provide more antioxidants as they give bring you the defence abilities that they had to develop to protect themselves without the help of chemicals. The skin of tomatoes contain lycopene, a powerful natural antioxidant which is preserved even when the tomato is consumed cooked.

This fruit also has other beneficial health properties:

  • Rich in minerals: potassium, manganese, magnesium, phosphorus, vitamins C, B3, B6, A, E and K
  • Low in calories
  • Rich in water (when consumed raw) and fibres
  • Lowers bad cholesterol and blood pressure

The consumption of tomatoes also helps prevent certain cancers such as prostate cancer in men and that of cervix in women. It is also beneficial for cardiovascular diseases as it prevents the formation of blood clots that can block the arteries.

 Consuming tomatoes

All preparations that includes tomatoes possesses the beneficial properties of this fruit. In order to maximise these benefits, it is important that the tomato is ripe and unpeeled. If you buy your tomatoes commercially, remember to wash them well in order to remove any treatment products that have accumulated. Avoid buying tomato based preparation commercially as they are enriched in sugar and salt.



There are many recipes using tomato, here is a popular and simple one, the goat cheese and tomato pie:

  • Quantity : 4 serves
  • Preparation : 10 minutes
  • Cooking time : 20 minutes


  • 4 tomatoes
  • 1 light goat cheese
  • 1 light pie dough
  • 2 eggs
  • 25 cl single cream 3 % fat
  • Salt, pepper
  • Provence herbs


1) Preheat the oven to gas 7/8 (220 °C)

2) Beat the eggs with salt and pepper

3) Add the single cream

4) Spread the dough in a pie tart

5) Cut the tomatoes in slices

6) Arrange them in rosettes position at the bottom of the tart

7) Pour the eggs and single cream mixture

8) Slice the goat cheese

9) Place the slices in circle on the tart

10) Cook for 20 minutes
